As far as relishes go, this one really cuts the mustard. Smear chef Ravinder Bhogal’s green mango mint chutney on a humble cheese sandwich to add a spicy twist to an ordinary picnic.
Green Mango Mint Chutney
Yields one jar
1 Bramley apple
1 green mango
1 sm. onion
1 hot green chilli
1 handful coriander
1 bunch mint
½ tsp. ginger, freshly grated
1 pinch sea salt
2 tbsp. castor sugar
½ lime, juiced
1 loaf sunflower spelt bread
1 block applewood-smoked cheddar
1. Peel apple, mango and onion and roughly chop along with the chilli, coriander and mint.
2. In a food processor, blend apple mix and ginger until you have a fine green paste.
3. Season with salt; stir in sugar and juice.
4. Smear the chutney over bread and add cheese. Wrap your sandwiches in tinfoil to keep fresh.
