Good people are hard to find.
And good people who make great pastries? Even harder.
But we found both tucked away in Madison Valley, where a French bakery called Inès Patisserie — perhaps the best in town — has been operating since February with very little fanfare.
Step up to the open kitchen and counter outfitted in white, orange, and mossy green. There, Charleville-Mézières-born Nohra Belaid (who named the shop after her daughter) crafts pastry dough, chocolate, seasonal fruit, and European butter into rich, delicate constructions.
Golden brown croissants fill gleaming cases in the morning. Afternoons mean a procession of carefully composed plum and apple tarts, sweet custard topped with mounds of apricot, savory quiche Lorraine, and Comté and jambon tartlets.
It doesn’t get better than that.
