You always read the last page of a novel first (just in case). And even as a kid, you preferred Darth Vader to Luke.
Local girl Mary Loomas goes dark, too. But Saratoga Chocolates, her new shop opening today in the Castro’s old Joseph Schmidt space, is the delightful result.
Loomas’s wickedly rich, complex chocolates are almost all made from a 71 percent cacao base. Her signature handcrafted Valencia orange truffles, sea-salted caramels, and bars like Le Jardin du Chocolat (studded with almonds, pistachios, dried apricot, candied orange peel, and crystallized ginger) use local ingredients such as E. Guittard chocolate and straight-from-the-farm fresh fruit.
Truffle-making and wine-and-chocolate pairing classes are coming soon at the new location, and Loomas plans to move production to the shop.
Clearly, the force is with her.
