Chef and onetime food writer Tim McGinnis also rolled up his sleeves to perfect laborious, old-school methods of butchering, curing, and smoking. Much of his refined comfort food is made (with love) from ingredients sourced nearby. We recommend the mesquite brisket and pasta with meatballs, though herbivores can get in on the action with veggie jambalaya and seasonal soups and salads.
