Spiced Pumpkin Donut Holes
Makes twelve
Ingredients
3½ c. all-purpose flour
4 tsp. baking powder
½ tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground ginger
½ tsp. freshly ground nutmeg
1 c. sugar
3 tbsp. unsalted butter, room temp.
1 large egg
2 large egg yolks
2 tsp. vanilla extract
½ c. buttermilk
1 c. canned pumpkin (unspiced, unsweetened)
Canola oil
1. Whisk flour, baking powder, baking soda, salt, and spices in a medium bowl.
2. With an electric mixer, beat sugar and butter on medium speed. Beat in eggs, then vanilla. Stream in buttermilk; beat in pumpkin.
3. Fold in half of the dry ingredients, blending gently. Fold in other half, blending gently again.
4. Chill for three hours.
5. Lightly flour your work surface. Press out dough to ½-inch thickness. Cut dough using a 1-inch round cutter and place discs on well-floured baking sheets (scraps can be kneaded back together and re-rolled).
6. Line two baking sheets with paper towels. Pour oil into a large, deep skillet to a depth of 1½ inches. Attach deep-fry thermometer and heat oil to 365°- 370°.
7. Fry donut holes in small batches until golden brown, turning every two minutes.
8. Using a slotted spoon, transfer to paper towels to drain.
6. Roll in cinnamon sugar and serve warm.
