Mathieu Palombino opens Motorino on Monday in the former Una Pizza Napoletana space.
Listen, the Don understands. Palombino found paradise in America (born in Belgium, speaks French), had a good trade (cooked at BLT Fish), made a good living (earned three stars from The Times). But now he comes to the Don and wants justice?
He’s gonna murder these pies! And he’s gonna do it with a prized Neapolitan Acunto wood-burning brick oven.
There will be something like a half-dozen styles of pizza, with seasonal accents like Brussels sprout leaves (in October), slabs of fire-roasted mortadella, and hunks of pecorino.
Sounds like an offer you can’t refuse.
