If good things come in small packages and to those who wait, then we’re on to something big.
José — a tiny tapas and sherry bar with just 30 covers and a no-reservation policy (read: wait your turn) — opens today on Bermondsey Street.
Spanish chef/owner José Pizarro (Tapas Brindisa) prepares the simple, seasonal dishes on a stove in full view so everyone feels like a guest in his private kitchen. As well as obvious favourites like jamon Ibérico and black olives, Pizarro recommends crab and basil croquettes, boquerones (anchovies) in Cava vinegar and meatballs in spicy tomato sauce. (There will also be a daily market menu serving whatever is fresh that morning.)
The charming Spaniard plans to open a full-size restaurant down the road later this year. Will bigger be better?
We’ll have to wait and see.
