You may already be a fan of French export Vincent Colombet’s made-to-order crepes, stuffed with everything from bacon to Black Dog Gelato. Today the chef fantastique creates purist Parisian loaves with earthy, all-natural ingredients at his new Logan Square bakery, La Boulangerie.
If the swirling aromas of crusty baguettes, country-style boules, and aged parmesan or fruit-flecked breads (pulled from the oven every two hours) don’t seduce you, buttery chocolate croissants and traditional galettes should do the trick.
Colombet designed the place with 19th-century Paris in mind: cast-iron bistro tables, black-and-white floor tiles, plus an ornate chandelier that’s pure Moulin Rouge. To bring you into the present: An exterior clock timer (to be installed soon) will allow passersby to track the emergence of each piping-hot batch.
