Start with Bee’s Knees Food Company, a new biz on the roasted nut circuit.
While vacationing in Australia, founder Chris Ferguson had an awakening: Chicagoans deserve bar snacks that rival our international counterparts. So Ferguson put his love of cooking and beer to use, testing recipes and pairings.
The result is no less than addictive: Heat from Sriracha and kick from ginger ignite Szechuan peanuts (try them with Three Floyds Alpha King). Chipotle and lime peanuts are pleasantly sweet and hot, thanks to brown sugar and cayenne (wash ’em down with Allagash White). Ferguson collaborated with La Trappe brewery to produce High Gravity Nuts, combining almonds, Quadrupel, liquid smoke, apples, and maple syrup.
