The Marengo-based family operation (located just 60 miles outside of the city) recently began selling its beef to local restaurants (The Bristol, The Butcher & Larder, Old Town Social). Now it’s your kitchen’s turn.
The all-natural prairie grass-fed cattle are free of pesticides, hormones, and antibiotics. The meat is lower in cholesterol, higher in vitamins, and rich in cancer-fighting enzymes.
Q7 raises two breeds of steer: Black Angus and Corriente, a leaner, lesser-known crossbreed with a bold, old-world flavor. Buy into the CSA for an eighth, quarter, half, or whole steer (great for sharing with friends). The meat is processed into burgers, bratwursts, roasts, ground beef, and every cut of steak imaginable.
Delivery is free in the Chicago area, but if you pick up the meat yourself, you can get a farm tour and save 10 percent.
