Lighten up with guilt-free fare at Prasino, opening Monday in Wicker Park.
The infamous suburban health haunt’s first city location doesn’t skimp on sustainability (prasino means green in Greek), from the interior (recycled corrugated boxes double as light fixtures; there’s a bar made of sustainable mesquite wood) to liquor variety (Fair quinoa vodka, the world’s first spirit made with fair trade-certified ingredients) to, of course, the food.
Executive chef Scott Halverson serves breakfast, lunch, and dinner dishes that are full of flavor: crunchy French toast with sweet goji flax granola; lobster-stuffed avocado; braised short ribs made with free-range, hormone- and antibiotic-free Niman Ranch meat; whole wheat flatbread. Wash it down with organic agave-sweetened soda, kombucha, fresh juice, or a smoothie.
Desserts are gluten free.
