But not impossible (smirk).
We got a sneak peek at Tribute’s top-secret cocktail pairing menu (the anticipated South Loop resto opens tomorrow). Beverage director Steve Cox’s culinary background (Kith & Kin, Trio) blends seamlessly with chef Lawrence Letrero’s comforting, regionally inspired dishes.
Before we give you the goods, a few fast facts: Tribute (serving breakfast, lunch, brunch, and dinner) overlooks Grant Park. The half-lounge, half-dining room space is ecofriendly to a tee.
Cocktail Pairing Menu
The dish: Veal sweetbreads, smoked potato, lavender, pickled ramp, and country lemon.
The sip: French 75 (Ransom Old Tom gin, simple syrup, lemon juice, and sparkling wine).
The dish: Beet, smoked trout, arugula, hazelnut, citrus, and whole grains.
The sip: Tattooed Stranger (Old New Orleans Cajun Spice rum, El Dorado dark rum, grapefruit, Cynar, and orange bitters).
The dish: Sweet corn custard, chanterelles, mache, and bacon vinaigrette.
The sip: Elwood (Bulleit bourbon, muddled lemon and thyme, and grenadine).
The dish: Trout, smoked hominy, marcona almond, and green garlic.
The sip: Pretty Persuasion (Prairie organic vodka, Mathilde pear liqueur, St-Germain, hibiscus syrup, and champagne).
